Oatmeal White Chocolate Cranberry Cookies
These cookies appear at nearly every holiday and gathering, and rarely are leftover. The oatmeal keeps the texture chewy while the sweetness of the white chocolate and the tart cranberries give them richness. I’ve given platters of these for gifts and frequently receive a message asking for the recipe.
They keep well and bake evenly, which makes great for hoarding at home or taking on a road trip. Children and adults alike reach for them.
Ingredients
3/4 cup butter
1 cup brown sugar
1/2 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
2 eggs
1 teaspoon vanilla
1 1/2 cups flour
2 cups oats
White chocolate chips as desired
Dried cranberries or dried cherries as desired
Instructions
Cream butter and sugar together in a mixer.
Add baking powder, baking soda, salt, and cinnamon. Beat till combined.
Add eggs and vanilla. Stir in flour. Stir in oats.
Add handfuls of chocolate chips and dried fruit as desired.
