Strawberry Freezer Jam - No Cook
I have been making strawberry freezer jam since I was a child. I remember going to the fields to pick fresh strawberries to make this delicious treat.
This strawberry freezer jam is no cook and low sugar. Easy and quick!
Ingredients
4 cups fresh strawberries, hulled, quartered, and stems removed (roughly 2 quarts)
2 cups sugar, leveled off
2 packages (1.75 oz each) Sure Jell Premium Fruit Pectin for Less or No Sugar Needed Recipes
1 1/2 cup water
You will need 4 pints and 8 or 9 jelly jars, clean and ready for use.
Instructions
I usually do a quick mix in the blender until the strawberries are coarsely chopped. Do not blend until smooth.
Measure 4 cups of strawberries into a large bowl. Add the sugar, one cup at a time, stirring really well after each addition. The berries and sugar need to be measured exactly, or the jam may not set.
Let stand for 10 min., stirring occasionally.
In a saucepan, add the water and Sure Jell pectin package. Cook over high heat, stirring constantly.
Once the mixture is boiling, cook for 1 min, stirring constantly.
Remove from the heat and pour into the strawberry mixture.
Stir the strawberry and pectin mixture well for several minutes until all the sugar is dissolved.
Pour the jam into jars, leaving 1/2” of space at the top. (Usually to the bottom of the lid grooves)
Place lids and rings on the jars and leave at room temperature for 24 hours.
Place jars in the freezer and enjoy!
Yield: around 64 oz which is 4 pints or 8 small jelly jars. It is great on toast as well as pancakes, waffles, and ice cream!
Note: This will make a soft set jam.
